We believe that life’s too short to drink sh*t coffee, so we’ve made it our mission to provide everyday South Africans with delicious, locally roasted beans that translate into a magnificent cup of coffee.

Our Story

Guided by his love of good coffee and the rich, expansive flavours that accompany it, The Black Sheep Coffee Company was founded by Rory Lambson in 2018.

After working as a chef in some of the world’s top eateries, including a two starred Michelin restaurant, Rory and his wife decided to settle on home soil back in South Africa. With them they brought a vast knowledge of flavour profiles that Rory would later use to produce Black Sheep’s wonderfully complex coffee varieties, but not before they opened their own restaurant in picturesque Malmesbury – the town they now call home.

Before long, two became three when the couple welcomed a baby girl. Wanting to make more time for his growing family, Rory decided to pursue his passion for roasting coffee rather than spending long hours in the kitchen.

Rory now divides his time between his family and mastering the art of coffee roasting. Using ethically sourced beans from around the world, he hand roasts small batches at a time, always striving for perfection.

His artisanal roasting methods and sincere love for what he does is what makes The Black Sheep Coffee Company special – and it shows in the flavour.

The magic of roasting coffee…

Although it may seem like a fairly simple process, coffee roasting is akin to alchemy. Traditionally, the roasting process was passed down from artisan to apprentice, but with the knowledge we have today we can now take a more scientific approach to produce coffee of a higher quality than ever before.

Raw, or green, coffee beans are heated in a rotating drum which allows the bean to be heated and dehumidified evenly. Once the beans are sufficiently heated in that the sugars have begun to caramalise, the beans enter the development stage in which the roaster ensures the bean is roasted from the centre to the surface. The bean is now ready to be ground and turned into a fully developed cup of coffee that displays both the origin of the bean and the unique flavour that we, as roasters, bring to every batch.
